The first local peaches of the season have arrived! Here, they are gently simmered until tender, then mixed with Straus butter and raw honey for a delicious spread that contains no refined sugar and is more nutrient-dense and balanced than jam. It is delicious on toast, of course, but it can also be stirred into yogurt, served with meat (try it with pork chops or steak!), dolloped on pancakes or waffles, or just eaten with a spoon (honey butters are suggested in the GAPS diet to quell sweet cravings).
