The Hands That Feed You
Canais Young grew up outside Philadelphia in a family that ate lots of processed foods and rarely cooked from scratch. She is sad to say that she was a bit of a junk food junkie as a youth. Nevertheless, Canais learned how to roast a chicken at 16 years of age, and found she was interested in food and cooking.

Attending the University of the Arts in Philadelphia, Canais studied Writing for Film and Television. After graduating, she realized that breaking into professional screenwriting is difficult and she decided to pursue culinary training as a more practical career option.
Canais applied to Job Corps at the Whitney M. Young, Jr. Center in Kentucky, and completed Basic Culinary Training in 2010. Last year she started the Advanced Culinary program at Treasure Island, which culminated with coursework in Fine Dining this summer. The final stage of the program has included completing Work Based Learning at Three Stone Hearth over the past month.
Canais says that her time here has increased her confidence in her cooking ability, improved her sense of urgency in the kitchen, and honed her knife skills. She finishes her time with us this week, and then will return to Philadelphia, where she hopes to find work in a fine dining establishment such as a restaurant or hotel. She is also looking forward to introducing better food to her family, and teaching them how easy it can be to cook from scratch!
