Straus cream is cultured with Bulgarian buttermilk starter until thick and slightly tangy – a healthy, milder version of sour cream. Rich in beneficial fats and live enzymes, créme fraiche makes a perfect topping for a wide range of dishes—from savory to sweet.
Shelf Life: Depending on the other ingredients, créme fraiche will last up to three weeks under refrigeration.

I use creme fraiche all the time, and am very happy to have some available in glass rather than plastic. I dollop it on tacos, whisk it into salad dressings, and use it instead of cream to finish sauces, gravies, mashed potatoes, risottos, polentas, or pastas. I also like it as a dip for fritters and a topping for pancakes or french toast. It seems to make almost everything better!
