The Hands That Feed You
Salmon returned to Three Stone Hearth this week as we received our first fresh salmon shipment of the year. Our salmon is sourced by Mystic Salmon, an Alaska-based family owned and operated fishing business.
|Shannon & David Negus|
June through mid-August is the season for sockeye salmon, whose red flesh and delicate flavor are often used in sushi. Mystic Salmon harvests to order, and fish are only caught as requested. Shannon and David hire locals who are trained to use sustainable harvesting techniques and practice the principle of taking only enough to feed their families.
Enjoy wild Mystic Salmon’s catch next week in our delicious Salmon and Rice Cakes with Ginger, Black Sesame, and Scallions!
To see David and Shannon in action, check out Douglas Gayeton’s video clip, on The Lexicon of Sustainability: It not only features Mystic Salmon, but also TSH co-founder Jessica Prentice and other local food producers.
