This nightshade-free variation on traditional kimchi recipes uses ample amounts of horseradish as well as garlic, ginger and mustard greens to create a beautiful and distinctive kimchi. It has a bit of gingery-horseradish bite, but not the kind of heat you get with the hot chiles in our Spicy Red Kimchi. Its warming umami goodness ripples across the peppery notes.
