Classes & Workshops

We host educational programs throughout the year, from classes and hands-on workshops to a tour of the kitchen. For those interested in going deeper, we offer several intensive sessions, from one day to one week long, covering our nutritional and culinary practices, and our organizational and business model.

Dairy in Traditional and Modern Diets (6/27/17, 5:30-8:30pm)

Have you ever tasted freshly made yogurt? Wondered what to do with leftover milk? How to use whey and why? Do you know how butter is made?

People around the world have consumed dairy products, raw or cultured, for millennia in good health. In this class, we will look at dairying as a cultural practice and nutritional strategy. Mostly, though, you’ll be in our kitchen learning how to make yogurt, butter, crème fraîche, and more with TSH worker-owner and Dairy-Heiress Linda Kallenberger. After the class, step up to Linda’s Dairy Bar, and taste piima cream, feta cheese, dairy kefir and more. Go home with three samples of products made in class.

Learn our secrets from the inside! Join TSH Chef Maelia Long in the kitchen for a knife skills session, deboning Riverdog Farm chickens, and an afternoon presentation on Traditional Diets with TSH co-founder and Mission Fairy Jessica Prentice. Perhaps the best part: the day also includes a nutrient-dense lunch with our staff. Come enjoy a Saturday with us!

9:30 - 12:15pm: Chicken Deboning 101 with Maelia Long

1-3pm: The Nutritional Wisdom of Traditional Diets class with Jessica Prentice: bone broths, activated grains and legumes, fermentation foods and beverages, pasture-raised animals, full-fat dairy, wholesome sweeteners and more.

Please wear comfortable, closed-toe shoes (you will be on your feet!). Avoid wearing any scented products, and be prepared to pull your hair back and cover it.

Co-founder Jessica Prentice will provide an introduction to the work of Weston A. Price, and the 11 Characteristics of Traditional Diets. Come learn about the nutritional philosophy that underscores our work!

Class will take place at Three Stone Hearth Community-Supported Kitchen, 1581 University Ave, Berkeley. Tickets will also be available at the door.

Traditional Diets Day-long Intensive (7/29/17, 9:15am-3:00pm)

5 hours of instruction + lunch

Three Stone Hearth co-founder and Mission Fairy Jessica Prentice offers a day-long exploration of the nutritional philosophy that underlies all our work: The Nutritional Wisdom of Traditional Diets.

Jessica will cover:

• The studies and travels of Weston A. Price

• The eleven characteristics of traditional diets that kept people healthy for thousands of years before industrialization

• Culturing and fermenting foods to increase enzymes and probiotic activity

• Processing grains and other seed foods to maximize nutritional benefit

• Sourcing meat, dairy and eggs from pasture-raised animals, and working with the whole animal, from nose to tail

• Incorporating traditional fats and Omega 3 fatty acids, and why they are so important to our health

This day-long intensive will take place at Three Stone Hearth, 1581 University Ave. Students will join TSH staff for lunch at midday, and have the opportunity to shop in our store during breaks.

Jessica Prentice, co-founder of Three Stone Hearth, has been studying traditional diets for over a decade. She is the author of Full Moon Feast: Food and the Hunger for Connection and co-creator of the Local Foods Wheel. She also coined the word “locavore.”

Vibrant Health for Dogs and Cats (8/12/17, 10 - 11:30am)

Your pets may be suffering from malnutrition because of the food they are eating. There is so much information, and so much hype, in the world of pet foods, you may find yourself being “petfooled” as Joni Kamlet likes to say. Whether you feed a prescription diet, grain free, home cooked or raw, this class will have something to offer you.

Topics covered will include the disappointing truth about pet food, identifying nutritional deficiency in pets, and adding foods from Three Stone Hearth, such as bone broth and liver, to supplement a pet’s diet.

Joni Kamlet is a Registered Veterinary Technician (RVT) and a Certified Canine Rehabilitation Assistant (CCRA). She also has her certification in Applied Clinical Nutrition (for humans). In her current role as the Northern California Veterinary Representative for the company Standard Process, she teaches veterinarians about nutrition and supplementation. Joni also lectures to pre-vet students at Cal Poly and will be speaking at the American Holistic Veterinary Medical Association in October.

Week-Long Kitchen & Business Intensive - Deposit (10/04/17 - 10/10/17)

Have you wondered what goes into creating the products we offer at Three Stone Hearth? Would you like to learn more about our cooperative business model? This week-long intensive is a unique opportunity to immerse yourself in the work and culture of our Community Supported Kitchen. The session includes six and a-half days of classes, presentations and hands-on learning. Best part: a nutrient-dense communal lunch with our staff is included each day.

The learning objectives and opportunities include:

  • Three Stone Hearth’s business model, including history, organizational governance, operations, and finances.

  • The tools and skills required to run a Community-Supported Kitchen.

  • The principles underlying our model:

    • The nutritional principles of traditional diets

    • The economic principles of worker cooperatives

    • The organizational principles of our governance system, Holacracy, and of self-managing and self-organizing approaches in general.

  • Hands-on experience in the kitchen. Learn how to cook community-scale recipes following a traditional diets approach.

  • Connecting with others who are interested in the model, as well as with those of us who have made this our livelihood.

We ask you to make a $150 deposit to save your spot by registering through our web site. You will receive more information regarding due dates once we have a minimum of five people registered for the intensive. Once an arrangement has been made, you can return to this menu to pay the consultation fee.
