"Healthy Bones" Elderberry Shrub

For this very special shrub, we infused calcium-rich herbs in vinegar for several weeks to extract their bone-building minerals. Then we strained the vinegar and mixed it with local elderberry nectars, and raw honey. This shrub can be used to make a delicious beverage by diluting it 4:1 with bubbly or still water, a sprig of mint or a squeeze of lime (or both).

Friar's Cyder

Inspired by the traditional recipe for Fire Cider, our Friar's Cyder is a powerful, immune-building tonic. Fire Cider was developed by the eminent herbalist Rosemary Gladstar as a warming and energizing oxymel (vinegar-honey based medicine) to aid digestion, boost circulation, and break up congestion. Our Friar's Cyder has all these properties, but we have eliminated the cayenne, a nightshade which can be inflammatory for many. Take a shot of Friar's Cyder straight as a tonic, add it to salad dressing, or stir it into warm tea or broth.

Sally Fallon Morell describes this drink as being "valuable for its medicinal qualities and as a digestive aid. Beets are just loaded with nutrients. Citrus Yerba Santa Kombucha

This new beverage features Yerba Santa, a California native plant that was valued by the First Peoples, that has historically been used to treat asthma and other respiratory issues. It is also known as Mountain Balm and the Concow people of northeastern California call it wä-sä-got’-o. The plant also has the reputation of clearing and moving grief, and is used in environmental restoration as it can restore damaged lands and overgrazed ranchland. The flavor of our beverage is citrusy and refreshing, with subtle herbal notes.

Cranberry Apple Kefir

Dairy-free water kefir. Water kefir grains, also called tibicos, are used to ferment a base of filtered water with unrefined cane sugar and just a touch of molasses. The sugars are metabolized by the kefir grains to produce a light but rich effervescent base. The brew is then flavored with Gravenstein apple juice from Sonoma County and cranberry concentrate to produce a bubbly probiotic “soda.” Cranberries are rich in antioxidants and other nutrients, making this not only a delicious drink but a nourishing tonic as well.

Root Beer Kefir

Dairy-free water kefir. Water kefir grains, also called tibicos, are used to ferment a base of filtered water with unrefined cane sugar and just a touch of molasses. The sugars are metabolized by the kefir grains to produce a light but rich effervescent base. This old-timey brew is then flavored with sarsaparilla, sassafras leaf, ginger, turmeric and other herbs and spices to produce a bubbly probiotic “soda.” Dandy blend and vanilla bean lend this fizzy beverage a rich and complex flavor. If you are a root beer lover who is ready to graduate to a real roots beer, this is the drink for you!

Ingredients: filtered water, sarsaparilla, cane sugar, dandy blend, molasses, turmeric root, ginger root, cinnamon, vanilla bean, sassafras, black peppercorn, cardamom seed, allspice

Recipe is dairy-free and gluten-free*

*Dandy Blend is made of the water-soluble extracts of five ingredients; three roots and two grains (barley and rye), not from the ingredients themselves. The ingredients are roasted, covered with hot water, and allowed to steep. The water, with the soluble portions of all the components, is separated from the grounds. The remaining fine brown powder left is what becomes Dandy Blend. All the gluten and other water-insoluble substances are left behind.

Our neighbors at The Edible Schoolyard gifted us a bounty of Mediterranean bay leaves from a Bay Laurel in their garden. With citrus notes of Berkeley-grown lemon verbena, this refreshing drink has a crisp and lively character, with nuanced herbaceous notes. Jun is a unique cultured beverage that is made from honey and green tea. Its origins are clouded in mystery… Some say it comes from Tibet. It uses a culture similar to a kombucha SCOBY or water kefir grains. This is a perfect alternative for those who prefer to avoid all refined sugar, or are on GAPS protocol, as the only sweetener is honey.
