Comes frozen this week. Golden chicken fat from our roasted pastured chickens is infused with sauteed onions, then strained for this classic Eastern European cooking fat. It is a perfect ingredient for matzoh balls or matzoh brei, and can also be used for pan frying or as a alternative for butter on bread, steamed veggies and cooked starches. Schmaltz was prized by Jewish grandmothers as an immune system booster.

Comes Frozen this week. The trotters (feet) are the most gelatinous part of the hog, and so broth made from them is thick and nourishing. This broth is made from the fresh (unsmoked) trotters along with pastured pork bones of Marin Sun Farms pastured pigs. Pork broth is traditionally valued by nursing mothers for increasing milk flow, and has been reputed to prevent wrinkles because it is so rich in collagen! It also makes a delicious base for bean dishes, is great for cooking greens, and is perfect for Asian-style soups flavored with ginger and soy sauce.

Escarole is one of the classic and deeply nourishing greens that is prized in Europe but sadly lacking in the American diet. Ours comes from County Line Harvest this week, and its tender leaves have a hint of bitterness which is balanced in this dish by braising it in tomato broth with bay leaves for a rich and delicious "brodo." It is finished with grated Parmigiano Reggiano and black pepper. Add beef or chicken broth and re-season for a soup, or try serving it over polenta, rice, or pasta. Also great with Italian sausage or your favorite white fish.

Pipián is a popular traditional Mexican green mole, not as well known and appreciated here as it should be, according to many top chefs. It boasts a bright flavor, a rich, nutty undertone and just a bit of heat, with tomatillos, toasted pumpkin and sesame seeds, poblano and serrano chiles, and lots of cilantro to finish. Our version was drawn from a traditional family recipe by TSH Chef Concepción del Río, who is on a Mexican culinary tour as we speak.
