If anyone knows the secret to making incredible authentic tortillas, it’s Sheera Duerigen of Alma Semillera. Ask anyone who’s tried their blue and white corn tortillas that we sell fresh and frozen every week. In this hands-on class, Sheera will demonstrate how to make corn tortillas from masa harina. We will use a tortilla press and learn how to hand-pat tortillas in the traditional way. We will discuss other applications for masa and why we need to nixtamalize corn before cooking with it (cornbread, polenta, grits, etc.) — a traditional process to increase digestibility and nutrient availability. Everyone will go home with a bag of masa harina, and handouts that include recipes for masa-based dishes.
Sheera Duerigan founded Alma Semillera in 2013 along with her partner Joaquín Estrada, who grew up farming heirloom corn on his family ranch in Guatemala. Their mission is “the preservation and revitalization of ancestral Mesoamerican foodways. We aim to achieve this by: offering nutrient-dense food products, featuring precolonial ingredients and heirloom/landrace varieties, and supporting those who want to bring ancestral foods into their modern lifestyle by providing resources, education, and recipes.”

If you pre-register for this class and are unable to attend, please send an email to firstname.lastname@example.org letting us know. You may cancel and request a full refund up until 24 hours before the class. We will issue a credit to your account for the full class price. If you cancel with less than 24 hours notice, we will not issue a credit to your account, however you may apply the class fee towards a future class to be used within 6 months. After 6 months, that credit will be void. If you can not attend, you are also welcome to send someone else in your place. However, please let us know that you will be doing this. If you contact us after the class, no refunds or credits will be issued. When Three Stone Hearth, must cancel a class, you will receive a full refund for any fees paid towards the class.
